  • 1 Litre Coconut milk
  • 100 grams Coconut sugar or maple syrup
  • 1 Vanilla Bean
  • 3 Gelatin sheets
  • 3 Tablespoons Sea moss gel

  1. Let's get started. In a medium pot add coconut milk and sweetener - bring to a gentle simmer.⁠
  2. Split the vanilla bean long ways down the centre to expose the seeds, using the back of a knife scrape out seeds from both halves and add to the milk.
  3. Now to activate gelatin sheets; in a bowl add a small amount of room temperature water, massage gelatin sheets in the water until they softens to a gel like state. Then remove gelatin from water and stir into pot of milk. Discard the water.
  4. Using a wooden spoon; stir milk until gelatin completely dissolves. Then remove pot from heat & stir in sea moss gel⁠.
  5. We then strain the mixture through a sieve and into a jug or vessel, one that is easy to pour into the ramekin or glass for presentation.
  6. Okay, now we are ready to set the panna cottas. Carefully pour the milk mixture into ramekins, glass or small mason jars. Then transfer them in fridge to set .
  7. After about 3 - 4 hours it should be completely cool, firm but jiggly, ready to eat.
  8. ⁠You can dress them up with fresh fruit or jam of your choice. Enjoy!
